Citrus Salmon

Ingredients:
- 1 lb (500g) salmon fillets
- Salt and pepper
- 1 tbsp cornstarch
- 1 tbsp water
- 2 tbsp undiluted frozen orange juice concentrate
- 1 tbsp lemon juice
- 1/4 cup brown sugar
- 1 sliced orange
- parsley
Directions:
- Sprinkle both sides of the salmon fillet with salt and pepper.
- Mix the cornstarch and water in a small bowl to form a paste.
- Add the orange juice concentrate, lemon juice and brown sugar.
- Stir mixture well until all the ingredients are dissolved.
- Set aside.
- Pour half of the sauce into the bottom of a microwaveable dish.
- Place the salmon fillet in the dish on top of sauce.
- Pour the remaining sauce over the salmon.
- Cover the dish with plastic wrap.
- Vent to allow steam to escape.
- Microwave on high for 7-10 minutes (depending on microwave).
- Remove from microwave and remove plastic wrap.
- Place the fillet on a plate.
- Stir remaining sauce and pour over the fillet and garnish if desired.

Looks tempting. I usually prefer spicy food so this dish should be a nice change. But wouldn’t the orange juice and brown sugar make it sweet?

Showed this to my mother, she couldn’t resist and made the next day it for dinner, was great :)


I have tried red salmon with curry. Its delicious, will have to try this one.
